Actually there were double slit experiments conducted that successfully watched which slit does the electron/photon go through which still preserved the interference pattern. It all depends on how you watch.

I think the idea that the particle goes all possible ways is just an approximation because we don't know better ways how to describe that.
Another nice thing to look at is the
ultra-sensitive bomb testing problem. It reminds me of zen: observing by not observing.
